In late August, our foeder beer had taken on a stone fruit character with a slight vanilla note... the perfect background to showcase apricots. We added 700 pounds of them to a 75/25 blend of foeder beer with a light, fresh saison before refermenting. The result is a dry, fruit-forward beer with a gentle acidity and layers of subtle flavour.
